Looking for something quick and delicious for lunch? These tasty tuna cakes are just what you are looking for. I went to look for my camera to take a photo of these tasty tuna cakes, but when I came back to the kitchen.... They were gone! Needless to say the question of the day was "Are there any more?"

Looking for something quick and delicious for lunch? These tasty tuna cakes are just what you are looking for. I went to look for my camera to take a photo of these tasty tuna cakes, but when I came back to the kitchen.... They were gone! Needless to say the question of the day was "Are there any more?"

Ingredients

2 cans white tuna, drained and flaked

1 pkg stove top stuffing with cranberries

1/2 cup shredded cheddar cheese

2 tbsp chopped green onion

1/3 cup grated carrot

1/4 cup Miracle Whip calorie wise

2 tbsp sweet relish

2 tbsp Craisins

3/4 cup water

Method

In a medium size bowl, mix the tuna, stuffing and seasoning packet with the stuffing, cheese, green onion, carrot, Miracle Whip, relish, Craisins and water. Stir until combined. Cover the bowl and refrigerate for 30 minutes. Meanwhile heat a non-stick pan with 1 tbsp butter. Scoop tuna mixture with an ice cream scoop into skillet. Gently flatten with a spatula. Cook for about 2 minutes on one side, then turn to cook on the other side. Be carefull flipping the tuna cakes over. Serve on a bun or with a side of salad. Mine didn't last that long...

Chefs tip: You can substitute the tuna for salmon if you like.
