Table Talk -
A light and refreshing salad with lots of fiber too!
Great serve with grilled chicken or even alone on a bed of lettuce.
Ingredients
1 can or 2 cups of brown lentils cooked
1/2 cup diced tomatoes
1/2 cup diced zucchini
1 can kernel corn, drained
1/2 cup chopped red onion
1/2 cup diced red pepper
Dressing
2 tbsp sesame oil or olive oil
Juice of 1 fresh lime
2 tbsp honey
Handful chopped fresh parsley
Method
Toss all salad ingredients together in a medium size bowl. In a small separate bowl mix the oil, lime juice, honey and parsley. Add the dressing to the salad. Refrigerate until ready to use.
