These muffins surely hit the hungry spot, either at home or on the go. The combination of bananas and chocolate, well you just can't get enough of it. If you have the ingredients at home, double the recipe, they will be gobbled up before your eyes.
Ingredients
1 3/4 cups all purpose flour
1/2 cup brown sugar
1/2 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
4 ripe bananas
1 tsp vanilla
1 tbsp milk
1/3 cup butter, softened
2 eggs
1 cup semi sweet chocolate chips
Method
Preheat oven to 350 degrees. Spray a 12-cup muffin pan with a non-stick cooking spray.
In a large bowl combine flour, sugar, cinnamon, baking powder and baking soda. In another medium sized bowl, mix bananas vanilla and milk. Add banana mixture to dry mixture. Mix with mixer on low speed. Mix another minute until well blended. Add eggs one at a time. Blend well. Fold in chocolate chips with a spoon.
Fill muffin cups 3/4 full. Bake for about 15-20 minutes or until dome when a toothpick is inserted comes out clean.
Chefs tip: A nice idea for a house warming gift is simply to bake theses muffins, leave them in the pan and wrap with clear plastic, the gift basket type. Tie with a large bow and attach a new wooden spoon and the recipe itself.
