I hope by now everyone has their Christmas shopping well under way or even better all done. Only two more weeks of shopping left! If your still baking those Christmas goodies, here is a yummy cake recipe you can try this year.
Family Favourite Recipes
Every year my mom makes this Christmas cake. Usually more than one since before it gets a chance to cool my dad has it cut and we all have some, of course the cake gets given away too.
Fresh Butter Cake
1 pound of fresh butter, softened
2 cups of (white) sugar
4 eggs
1 cup of hot milk
1 cup of raisins
2 cups of cherries (whole or cut up)
3 ½ cups of flour- use 1/4 cup to flour fruit
1/4 tsp. salt
1 ½ tsp. Baking powder
3 tsp. vanilla
Cream butter and sugar very well. Add eggs one at a time, add vanilla. Mix. Add dry ingredients alternating with the hot milk. Flour fruit and then fold into batter. Grease and line the bottom of a tube pan with wax paper, bake at 300 degrees for about 1 hour. Check your cake it may need a few more minutes, it is important not to overbake the fresh butter cake. Cool in pan for 15 minutes before removing. Enjoy!
