Moose Meatballs with Cranberry BBQ sauce


It’s moose hunting season again, and with that comes new recipes to try.

This is a really easy and delicious meatball recipe that can also be used with regular lean ground beef. But try the moose burger first. You’ll even fool those that say they don’t like moose!  

 

Meatballs

2 lbs ground moose

1 cup cornflakes crumbs

2 eggs

1/4 cup snipped, finely chopped fresh parsley

2 tbsp Soya sauce

1/2 tsp garlic powder

 

Sauce

1 can whole cranberry sauce

1 1/2 cup chili sauce

1/3 cup ketchup

2 tbsp brown sugar

1 tbsp lemon juice

2 tbsp dried minced onion

 

Method

In a large mixing bowl, combine all the meatball ingredients. Mix well. Shape into 1-2 inch meatballs. Arrange meatballs in a single layer  in a baking dish. Bake for 30-45 minutes or until meatballs are firm and no longer pink inside, turning meatballs over once. Drain well..

In a medium mixing bowl, add all the ingredients for the sauce. Combine well. Pour over the meatballs in the baking dish. Bake uncovered at 350 degrees for about 45 minutes or until the sauce is hot and bubbly and the flavors are blended. Serve over hot cooked rice.

 

 

Moose and Broccoli

Slivers of moose and broccoli are quickly cooked in a soy ginger sauce. This makes for a very quick and tasty dinner. Serve over hot over rice or noodles.

1/4 cup all-purpose flour

1 1/2  cup of beef broth

2 tablespoons white sugar

2 tablespoons soy sauce

1 teaspoon chopped fresh ginger root,or 1 tsp ginger paste

1 clove garlic, minced

1 pound moose steak, thinly slivered

4 cups chopped fresh broccoli

1 cup sliced red peppers

Method 1.    In a small bowl, combine flour, broth, sugar, soy sauce, ginger and garlic. Stir until sugar and flour are dissolved. 2.    In a large skillet or wok over high heat, cook and stir moose 2 to 4 minutes, or until browned. Stir in broth mixture. Add broccoli and peppers.. Bring to a boil, then reduce heat. Simmer 5 to 10 minutes, or until sauce thickens.
